Any leftover citrus syrup for morning drinks, desserts, or for additional servings of the drink.

Bikini Recipe

Yields 10 people

Ingredients for the Clementine Syrup (produces 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g caster sugar

Ingredients for the Premix (makes 850ml, to serve 10)

400ml good quality vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (as made above)
A few cranberries, for garnish
Mandarin essential oil, for finishing

Method

Making the Cordial: Place every ingredients inside a saucepan, bring to a gentle boil, stirring so the sugar melts. After that, remove from the burner allowing it to cool completely. Decant into an sterilised bottle, close it and refrigerate it chilled, where it will keep for around a month.

For the Cocktail Base: Combine the specified spirits and syrup in a big jug, allow it to infuse for an hour, then filter it best through cheesecloth, to ensure it's perfectly clear.

When ready to serve: Pour 85ml of the batch mix into your cocktail shaker packed with ice, and agitate lightly for one minute until cold. Pour to a frosted cocktail glass or a similar vessel, decorate with some cranberries and finish with a brief mist with the mandarin essence over the top.
